Spicy beef with wilted greens & egg
Pan fry the beef mince in a little oil until cooked through and nicely coloured. Add 1 tablespoon of the curry paste and toss through. Season with a little salt or fish sauce if desired.
Blanch shredded bok choy for 1 minute and remove from water.
Soft fry 1 egg per person - nice runny yolks. Salt the tops.
To serve - steamed jasmine rice - or maybe noodles, mince, bok choy on top and the egg to finish.
Additional options here - chopped coriander on top, your favourite chilli oil or hot sauce. This is my favourite go-to meal. Eggs work on everything right?
