SPICY BEEF MINCE

A quick and easy midweek dinner perfect for cooking outside. Serves 2.

300-400g beef mince
Peanut oil
1 brown onion - cut into thin slices
1 large garlic clove - crushed with salt
2cm ginger - finely chopped
Chilli paste (& oil)
Handful basil
Handful coriander
2 eggs
Fresh eschallot
Fried eschallot
Salt & pepper

Heat 2 tablespoons of peanut oil in a pan until smoking hot. Add mince to the pan and fry hot and fast adding salt as you go. Remove beef from the pan and wipe clean. Add another tablespoon of oil and fry onions, fresh eschallot, garlic and ginger. Once softening add chilli paste and oil to taste. We like to be generous! Return beef to the pan and taste. Season or add a little more chilli paste or oil as desired. Remove from the heat and stir in herbs. While pan and fry 2 eggs. Plate up spicy beef with fried egg on top with fried eschallots and white pepper.

Tips:
Cook outside so you can get the pan and beef really hot without smelling out the kitchen.
When crushing or finely chopping garlic add salt to help break it down
Crack egg into a small bowl before pouring into pan.
Freshly cracked white pepper is perfect for Asian food. Use a mortar and pestle if you have one.
