Satay lamb

Take 1 butterflied lamb leg. Add a little seasoning, pop on the bbq and cook till just right (about 20 minutes with a good rest).

Heat the satay sauce from local legends Byron Bay Peanut Butter Co.

Pop your broccolini into boiling salted water then pull out when opaque and just soft.

Serve with basmati rice. Nice with a little coriander on top too….
