Mushroom Risotto

Risotto made easy is the other way of looking at this one. Fair dinkum dinky di risotto with porcini from Italy.

We like to add a few extra sautéed mushrooms, lashings of grated cheese and of course bread to mop.

Instructions are on the packet - but they say - Bring 3 1/2 cups water to the boil, add 2 tablespoons oil, add the contents of the packet and cook for 16-18 minutes.

Add a little cream and seasoning…and drink with a Sangiovese! Good idea! Enjoy.
